sir, what is the soft core processor used in virtex ultrascale and ultrascale+. please do reply

A soft processor, by definition, is not hard-wired in the FPGA. As a result, you can use almost any core you like. Xilinx's MicroBlaze is probably the best-supported option on these forums. There are also a variety of open-source and commercial processors available. Pick something that matches your needs (ie performance versus resources) and go from there.
