I am interested in developing a new project that uses AFDX based on xilinx series 7. The problem is, that as far as I understand, the only evaluation kit that allows me the use of two Ethernet ports is ML510, with a Virtex-5, so I suppose I will have to develop a new board with my own design.
Between Artix, Kintex or Virtex, which of these three Series 7 FPGA is the most suitable to support a AFDX design?

Why not put a SOC processor on the board, with off-the-shelf operating system support? There are many choices for inexpensive SOC processors with multiple high-speed ethernet ports.
WARNING: getting a datasheet from an ethernet PHY supplier can be more difficult than getting a politician to tell the truth in an election year, depending on the supplier.
If you are in a hurry, select parts which are already in production.

We are also interested to implement AFDX on FPGA. I have found your post from 2012 and I would like to know your position. Have you implemented AFDX on FPGA ? Please could you give me a status ?
